Light Zucchini Caserole

Ingredients
2 cups sliced zucchini1/2 light can cream of chicken or mushroom soup1 cup grated carrot1 medium onion, diced2 cups seasoned croutons1/2 cup fat free sour cream6 tbsp margarine
Directions
Cook zucchini in boiling water until tender. Drain. Saute onion, carrot in margarine. Mix 1 1/2 cups croutons, soup, sour cream. Mix in zucchini and fold in carrot mixture. Top with remaining croutons. Bake for 30-45 minutes at 350.

    I like the sound of this, but I'll use rapeseed oil or olive oil instead of marg, and find something else instead of the canned soup - in fact, maybe just omit entirely as the sour cream will be there.
    Thanks for the idea, I'll enjoy adapting it for our needs.
