Zucchini Stew

Ingredients

1 ¼ lbs. ground turkey sausage1 medium onion, chopped1 ½ cups celery, chopped2 28 oz. cans diced tomatoes4 zucchini, sliced ¼ inch thick (about 8 cups)2 ½ tsp. Italian seasoning½ tsp garlic powder½ tsp pepper 1 bag frozen corn2 green peppers, chopped in one inch pieces1 jar spaghetti sauceShredded mozzarella cheese, optional as garnish
1. Brown sausage and drain
2. Add onions and cook until soft
3. Stir in zucchini and celery, and tomatoes and sauce.
4. Bring to a boil, cover and simmer 20 to 25 minutes
5. Add corn and green pepper. Cover and simmer 15 minutes
6. Mix corn starch and water together and stir into stew to thicken
7. Serve with mozzarella if desired

I modified this based on what I had on hand... garlic, onions, lots o' zucchini, baby potatoes, a little broccoli, 1 28 oz. can of diced tomatoes and sausage & peppers Ragu spaghetti sauce. Cooked for about 40 minutes, then added some frozen green & yellow beans and carrots for the last 10min. Fab! - 10/15/10
