Apple Muffins (vegan)

Muffin:2 cups flour (half whole wheat, half white)1 tsp baking powder1/2 tsp baking soda1/2 tsp salt1/2 tsp cinnamon1/2 tsp nutmeg6 TB cup vegan buttery spread1 cup raw sugar1.25 TB vanilla extract1 medium apple, peeled & choppedreplacement for 2 eggs (applesauce, mashed banana, flaxseed with water, etc)Topping:1/2 cup brown sugar1/4 cup white flour3 TB cup vegan buttery spread1.5 tsp cinnamon
Makes 12 large muffins
Mix flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a bowl.
In a separate large bowl, beat together butter, sugar, vanilla, and egg replacements. Stir in the chopped apples. Slowly stir in the flour mixture.
Pour into 12 muffin tins with baking liners.
In a small bowl, make topping mixture. Combine sugar, flour, butter, and cinnamon. Cut together into you get a crumbly consistency. Divide and sprinkle evenly over 12 muffins.
Bake at 375 degrees for 20-24 minutes (when a toothpick comes out clean).
Variations: The next time I try this I will probably add raisins or dates, walnuts, etc.
