Blackberry-Red Wine Sauce

6 tbsp blackberry jam1 red onion, chopped1 cup red wine2 tbsp olive oil2 cups vegetable broth1 tbsp corn starch, mixed in warm water
Heat olive oil in non-reactive skillet. Add red onion. Cook about one minute until onion is tender.
Add wine and black berry jam. Cook on medium heat until mixture is reduced by half (about 10 minutes). Stir occasionally with wisk.
Add broth. Reduce by half again. Wisk occasionally.
Wisk in corn starch/water mixture. Mix until desired thickness is reached.
Serve immediately over chicken, pork, or steak. Makes 12 servings.
NOTE: Recipe can be halved. If you do, it may thicken without the corn starch. Only add it if needed.
