Slow Cooker Guinness Beef Stew

2 tbsp. flour1.5 lb. stewing beef2 tbsp. tomato paste3 cloves garlic, crushed1 medium onion, chopped4 sprigs thyme, bunched together1 bottle Guinness beer2 tbsp. olive oil
Coat beef in flour, salt, pepper, and cayenne. Brown quickly in olive oil, but not enough to cook through.
Add tomato paste diluted in 1/2 cup of water, onions, garlic, and tomato paste. Simmer for 5 minutes. Put in slow cooker.
Pour some of the Guinness (about half a bottle) into the pan and simmer for five minutes, scraping up bits on the bottom of pan. Add to slow cooker, along with the rest of the Guinness and the thyme.
Cook on low for 4 hours or until beef is cooked through and tender.
Serve on top of homemade mashed potatoes, garnished with scallions and fresh chopped parsley.
