Grilled Marinated Summer Vegetables

Ingredients
1 Medium Yellow Squash1 Medium Zucchini Squash2 Small Onions2 Medium Tomatoes (Any Color)1 Large Bell Pepper (Any Color)Italian DressingSalt and Pepper to Taste
Directions
Pare and cut the 2 types of Squash into 1/2 inch slices. Cut each of the onions into 6 wedges for a total of 12 wedges. Cut each of the Tomatoes into 6 wedges. Cut the Bell Pepper into 1 inch chunks. Put all of the cut vegies into a large bowl, add the Italian dressing and the salt and pepper to taste. Mix well and let them marinate for about 10 minutes.
You may use a barbeque grill pan or aluminum foil that has been sprayed with non-stick spray to cook your vegetables on the grill over medium heat.
Stir occasionally and cook for about 10 to 15 minutes or until they just begin to soften. Makes 6 servings.

    I add an eggplant to the mix and it is great. Slice them, put them in the marinade and leave it in the fridge. I take out what I need and grill it each night. They are also great cold! - 5/29/10
