Corn Salad

Ingredients
1 Lime2 Tbspn EVOOil1 Garlic Clove - minced2 tspn dried Cilantro1 tspn Crushed Red Pepper Flakes0.5 tspn Salt0.25 tspn Pepper1 Can Yellow Corn0.25 cup red pepper diced0.25 cup celery chopped0.25 cup red onion diced
Directions
Juice Lemon and whisk in Oil, garlic, salt, pepper, cilantro and crushed red pepper flakes.

Add in corn and veggies.

Zest lime in as well if you like.

Refridgerate for at least an hour and enjoy.

***add whatever amount of crushed red pepper you like based on your tolerance for spicyness!!

    My boyfriend said he liked it, but I didn't like it at all. It sounded good, though. I think this could be good with a totally different dressing... maybe an italian dressing or oil/vinegar dressing. Definitely missing something important as is. - 8/30/08
