Banana Bread with Walnuts and Greek Yogurt

Ingredients
2 cups of white flour1.25 tsp of baking powder1/2 tsp baking soda1/2 tsp vanilla extract1/4 cup of brown sugar1/2 cup of granulated Splenda1/2 cup egg beaters (equivalent of 2 large eggs) 1/2 cup chopped walnutsOne 5.3 oz container of nonfat plain greek yogurt '3 very ripe bananas (mashed)
Directions
Pre-heat the oven to 350. Once everything is mixed, pour into a bread loaf pan and put it in the oven for one hour. Makes 12 servings.

    I modified it a bit and used half the normal oil and half low far greek yogurt, I also used half the normal sugar instead of splenda, and half whole wheat flour instead of all white flour. I ALWAYS use yogurt in my cakes, just had never thought to use Greek yogurt! MMMMM! - 1/8/09

    This is very flavorful, but a bit dense because of the lack of fat. I think I would use regular fat yogurt or add a little canola oil next time. - 11/30/08
