Ingredients
1 can enchilada sauce1 c vegetable broth1 can black beans1-2 yellow onions1 zucchini2 TB taco seasoningcooking spray
Directions
Saute onions with cooking spray and taco seasoning for five minutes. Add enchilada sauce, broth, black beans, and zucchini. Bring to a boil. Reduce heat and simmer on low heat for 15 minutes. Serve with lowfat sour cream or fat free yogurt. Makes two 1-cup servings.
