Ingredients
2 Chicken Breast (cooked & shredded)1 can Black Beans1/2 cup salsa1/4 cup sour cream8 tortillasSauce:3/4 cup salsa1/4 cup sour cream1/4 cup shredded cheese2 Tbs. Cilantro
Directions
Cook & shred chicken. Heat oven to 350. Grease 9 X 13 pan. Combine first five ingredients for filling. Place 1/2 cup mixture in each tortilla, roll. Mix remaining ingredients for sauce; spoon over enchiladas. Sprinkle with cheese, cover & bake 30 -35 minutes. Makes 8 Enchiladas.
