Portabella Mushroom Delight

Ingredients
4- medium sized portabella mushrooms4 tbls-of chopped onions/sauteed with Mrs. Dash sprinkled4-low fat deli thin sliced swiss cheese (or your favorite low fat cheese)2 tbls-extra light olive oil-brush on mushrooms 1 cup- of fine chopped/shredded lettuce1-1/2 tbls-Kraft light mayo (or of your choice)1/2 cup-Red Ripe Tomatoes,chopped1-2 tbls. *Wishbone Red Wine Vinaigrette salad dressing4-Reduced Calorie Hamburger Buns
Directions
Prepare slaw topping before cooking the mushrooms by: Fine chopping the lettuce, add about 3 tsps of mayo til creamy, and then add a little Wishbone Red WIne vinaegrette salad dressing for flavor-add chop tomatoes---cover and refrigerate ...THEN:
Clean mushrooms/remove stems-brush both sides with oil---place gill side down on broiler pan (lined with foil) , broil tops for 1 minute turn gill side up , put 1 tbls of sauteed onion on each mushroom..
Broil on high 4 inches from broiler- for 2-3 minutes, watching carefully not to burn..add one piece of swiss cheese to each and broil for about 1 minute more, or until melted.
Serve on buns (toasted like a bagel) add slaw dressing to one side of bun and mushrrom to other....season to your taste buds..close sandwich and bite in!! Yum!! Yum!!

    Although I did not follow your recipe exactly, I loved the idea of topping the portabello burger with the slaw. I made my slaw with purple cabbage and it was a hit. Thanks for the idea. - 9/7/08

    thank you for taking time to try this recipe, or close to it LOL and for commenting on it. I am in love with Portabella mushrooms and make them several different ways and they just keep getting better and better....I experiment differently almost eveytime I make them now...God bless, Dotty
