Ingredients
· 6 oz cooked cubed chicken breast meat· 3 Spritzes Pam Butter Spray· ½ cup tap water· 1 large red bell pepper· 1 large minced sweet onion · 1 cup fresh corn cut off ear· ¼ cup minced fresh parsley· ¼ cup minced fresh cilantro · 1 teaspoon powdered cumin · 1 teaspoon chili powder · 1/4 teaspoon salt · ¼ tsp cayenne pepper · 6 oz shredded Colby cheese · 2 oz shredded Mozzarella · 3 full sheets Joseph’s Lavish Roll-Ups = 6 servings (Wal-Mart has them by the Deli- Delicious and very low in calories and carbs)
Directions
Spray Sauté Pan with Pam- Heat pan on high
Saute’ Onion, Red Bell Pepper – As the mixture
heats up, pour in a little water to steam the vegetables. Put in corn, and the rest of the water. Sauté till allof those are tender.

Put in spices continue to sauté. Add in chicken. Keep Cooking until water has reduced down and it’s now a Thin sauce. Total cooking time 30 minutes.

(That is your filling)

Now layer in a casserole pan altering layers of the Flat Bread, and Filling mixture, and Cheeses. Last layer will be the Filling/cheese.

Now, Nuke in the Microwave for 5 minutes!
That’s it. And it makes 8 servings
