Tofu Caesar Dressing

Ingredients
1/2 cup of silken tofu4 cloves of garlic, roasted or cooked in a bit of water1/2 a lemon juiced2 tbsps vinegar2 tbsps olive oil1/2 tsp dijon mustarddash of sweetenerto taste: onion powder, black pepper, cayenne pepper and salt
Directions
Mix everything in a blender or small food processor. Taste and correct seasonings. Keeps well for up to a week.

    This is yummy! It was good the original way, but slightly mustard-y for me so then I tried adding 1/4c more tofu and about a teaspoon more oil. I used roasted garlic from a jar to save time. Thanks! - 6/21/11
