Mexi-Pasta

Ingredients

* 2 tbsp olive oil* 1 packet of Boca burger* 1 can black beans, rinsed and drained* 1 can sweet corn, drained* 2 tbsp onion flakes* 1 oz Velveeta cheese loaf* .25 cup milk* .50 packet taco seasoning* .50 cup salsa* .50 lb small shaped pasta
Boil pasta in salted water until al dente.
While the pasta is cooking, heat olive oil over medium low heat in a large stir-fry pan. Cook the onion flakes and Boca until onion is lightly browned and Boca has defrosted.
Add the black beans, corn, taco seasoning, and salsa. Stir until thoroughly mixed.
Cut Velveeta into small slices or cubes and add into mixture. Add milk as needed to keep sauce from clumping.
Add pasta to mixture when it finishes cooking, stir to mix, and serve warm.
Makes 6 servings.
