Quick Whole Wheat, Oatmeal, Raisin Bread

Ingredients
2 1/2 cups nonfat milk2 tsp vinegar3 cups whole wheat flour1 cup rolled oats (uncooked)2 tsp cinnamon2 tsp ginger2 tsp baking soda2 tsp baking powder1 tsp salt1/2 cup brown sugar1/2 cup melted unsalted butter1/2 cup olive oil5 eggs1/2 cup raisins
Directions
In large bowl mix milk and vinegar. Let stand 5 minutes. Then add oatmeal, mix, and let stand 30 minutes. Preheat oven to 350. Spray 2 loaf pans with pam. In small bowl mix flour, cinnamon, ginger, baking soda, powder, and salk. Set aside. Add sugar, melted butter, eggs, and raisins. Combine all ingredients until just blended. Pour evenly into 2 loaf pans. Bake 55-60 minutes, until wooden skewer inserted in middle comes out clean. Cool for 10 minutes. Turn onto cooling rack. When cooled slice thinly and enjoy.(can freeze second loaf) Makes 2 medium loafs.

    I think I would've liked this bread to be a little bit sweeter and less moist (more bread-like, less cake-like) but still it is YUMMY, especially with jam/pumpkin or apple butter on top. Nice buttery flavor & great texture. Thanks for posting! - 5/23/12
