Un-stuffed Bell Peppers

Ingredients
1.25 lbs Extra Lean Ground Turkey (99% Fat Free)2 Chopped Red Bell Peppers1 large onion diced (about 1 cup)2TBL Extra Virgin Olive oil1 large can diced tomatoes (28 oz)1 1/3 cups cooked white rice2-3 TBL Itialian Seasoningsalt & Pepper to taste1 1/2 cup Sargento low fat Mexican Cheese (shredded) (1/4 cup each serving)
Directions
This makes about 8 cups (usually a little more). Each serving is 1 1/3 cup

You can used leftover rice or make it at the same time. If you make it with the meal, start the rice first!

Dice onions
Mince Garlic
Heat a large pan with 2 TBL olive oil, medium heat
add onions and saute until soft
add garlic, saute until fragrant
add Turkey, break up
add salt, pepper and Italian seasoning
and saute for 5 min (until some pink is left)
add bell pepper saute until soft (3-5 min)
add tomatoes and rice.
When Turkey is cooked through (no pink) add basil and turn off heat. Stir and add cheese.... or add cheese to individual servings, serve with your favorite salad or veggie.
