Ground Chicken Chili with BBQ Sauce

Ingredients
1 lb of lean ground chicken1 Tbsp olive oil1 large onion1 green bell pepper chopped1 tomato chopped1 can of beans (I used black)1 can of tomato sauce (15oz) (low sodium is better)4 Tbsp of Hunt's BBQ sauceSpices: Cayenne, chili powder, pepper, garlic
Directions
Saute onion and bell pepper til onions are clear.
Remove onto a plate.
Brown the ground chicken and spice it to your flavor.. I used garlic powder, red pepper flakes, chili powder, black pepper and cayenne pepper. (I like pepper ;) )
Add back the onion and bell pepper.
Add chopped tomato.
Add 1 can of beans.
Add 1 can of Tomato sauce
Stir. Let simmer for 5-10 minutes.
Add in 1/4 cup of Hunt's BBQ sauce. Simmer another 5 or so minutes.

Serve.

Ideas: serve over whole grain rice or whole wheat couscous.

This is spicy and a hit with my family. They can't hardly tell it's not beef ;)

    Excellent! I seasoned mine with Cajun seasoning and used Sticky Fingers Carolina style bbq sauce. Also it is man-approved; my boyfriend loved it even though it was not red meat. - 4/15/09

    I guess you can teach an old dog new tricks! I never would have thought to add BBQ sauce to my chili, but I will from now on.(I'm from Canada & used PC Stompin Stampede Sauce). I also added shredded carrots & celery. - 1/12/09
