Pineapple, Peach, Pecan Breakfast Muffins

Ingredients
1 Cup flour3/4 cup quick oats2/3 cup sugar twin brown1/3 cup wheat bran2 1/2 tsp baking powder1 tsp ground cinnamon1/3 cup chopped pecans3 tbsp canola oil1 cup skim milk1 egg3/4 cup crushed canned pineapple (no sugar added)2 tsp vanilla (optional)Filling1/4 cup chopped canned peaches (light syrup or no sugar added)1/2 cup cream cheese, low fat1 tbsp brown sugar
Directions
Preheat oven to 350 degrees. Line muffin tin with paper cups. Combine dry ingredients in a bowl. Then add remaining ingredients, mixing just until blended.
Make the filling; Cream together the cream cheese, tbsp of brown sugar and peaches.
Spoon the 1/2 of the muffin batter into the prepared tins. Place spoonfuls of the cream cheese filling on top, then top with remaining batter.
Bake for about 20-25 minutes.

    I enjoyed these. I made them with regular brown sugar instead of sugar substitute and they still only 225 calories, which isn't bad for a tasty muffin! It seems there are a lot of variations you could try on this recipe, too, and I think I might see where I can go wih it. Thanks! - 4/12/10

    since there is already baking powder in the recipe, it would be regular flour.

    Recipe was great! Didn't have a few ingredients so i sub`d them & was still great. The stuff i sub'd out were quick oats, brown sugar twin, peaches, pecans & wheat bran. Instead i used Regular cooking oats, regular brown sugar, pear, walnuts & wheat germ. Same measurements & it turned out amazing - 1/31/11

    You can buy brown sugar twin. BUT, I no longer agree with using artifial sweeteners. I would just use regular brown sugar. I should actually edit this recipe and get rid of that stuff...
