Chunky Skillet Potato Soup

Ingredients
1# potatoes (i used 4 med)1 chopped onion2.5 TBS oil2 cups chicken Broth
Directions
peel and slice potatoes into rounds - put in large skillet
Add in 1 chopped onion, 2.5 TBS oil and cover with water to a depth of 1/4 inch over top of mixture.
Bring to a boil over high heat and boil 20 minutes (or until water disappears and onions brown slightly.)
Add chicken broth, pinch of garlic powder and pepper.
Simmer for 5 minutes.
Serve with chopped parsely.

    This Soup was easy to make and delicious. I will be making it again. It calls for a pinch of garlic powder and pepper although not listed in the ingredients (which is really season to taste) I used white pepper and a dash of cayenne. Perfect! Thanks. - 9/1/08
