Ingredients
1 large red onion sliced thinly1 green pepper sliced thinly1 red pepper slice thinly2 cups whole button mushrooms1 bulb of garlic seperated and de papered1 can drained chickpeas or 1 and 1/2 cups of dried chickpeas tht have been prepared1 tbsp olive oil1/2 tsp ground cumin1/2 tsp kosher or sea salt1 tsp ground black pepper1 tbsp chili powder (I like new mexico chili powder found in bags in the hispanic food isle)1/4 tp cayenne pepper or more if you like it spicey
Directions
Pre Heat oven to 450
Slice peppers and onions very thin. I used a mandolin/v-slicer. In a big bowel place veggies, garlic and chickpeas. Drizzle with olive oil and then add spices. Mix with hands or cover and shake until veggies and spices are well mixed.

Spread veggies on a large greased pan. Bake for 25-45 minutes (depending on your oven) until veggies begin to brown or blacken to your liking. My oven takes forever and i like my veggies to be crispy!

My 2 little ones didn't like this, but hubby and I were THRILLED! He said they were a home run! I used sweet onion instead of red, added yellow pepper and zucchini, added dried oregano & left out cayenne. Roasted 25 minutes, and SHEER PERFECTION! Excellent side, but could stand on own as a meal! - 5/11/10

I REALLY LOVED THIS RECIPE. I AM SURE I WILL MAKE IT AGAIN AND AGAIN. I ESPECIALLY LOVED THE WAY THE THIN SLICED ONIONS CRIPED UP ALMOST LIKE ONION RINGS. VERY ENJOYABLE!!!! - 5/8/08

I absolutely love chick peas! I was especially pleased that the recipe called for kosher salt, since it is nutritious like sea salt. Yum!

This is very tasty and quite unusual. I think you could substitute any vegetables and have it work out great (I had mushrooms, zucchinis and carrots). It only seemed to need 20/25 minutes in my oven. - 5/4/08

This recipe was delicious and unique! I actually made it twice; once as written and a second time with veggies only (and including asparagus). You can definitely do your own thing - use different legumes, use additional veggies. Really good and filling! - 4/28/08

this recipe is great for my Misto! It's an olive oil spritzer and it gets very good coverage for not a lot of oil. I like my onions burnt! - 10/4/12

I made this with what I had on hand: onions, beets, mushrooms and fava beans (and left out the cayenne). I think it's the most tasty thing I've eaten all year!! This will be a staple in my house. - 4/21/11

This recipe was great! I also subbed in zucc. & organo & left out cayenne. I also threw in some turkey bacon & it added a nice smokey undertone to the meal. Will make again! Thanks! - 9/12/10

i dont think the veggies should be sliced so thin, they seemed to burn quickly, definitely didnt need 30-45 min. i think with a few modifcations this could be really delicious! - 5/7/08

YUM! I didn't have mushrooms on hand, but chopped up some carrots instead. 30-45 minutes seemed long to roast, I took it out after about 25 and thought it was plenty. Definately will make again! - 3/17/08
