Spanish Garbanzo Chicken Stew

Ingredients
Red pepper and Yello peppers - about half to a whole pepper of each depending on preferenceTinned Chick peas about half a canTin of tomatoes10oz Chicken breastHerbs - basil, oregano, parsleyPaprika to taste
Directions
Fry the peppers (sliced) in a teaspoon of olive oil or cooking spray until tender and a bit charred around the edges
Add garlic, crushed, and cook till tender also
Remove from pan and respray with cooking spray
Pan fry the chicken breasts whole and cook until browned
Add peppers, garlic, tomatoes (crushed), paprika, chick peas and herbs to pan and simmer gently until chicken cooked through
If you reserve some freshly chopped flat leaf parsley till the end for serving this is nice
You can also cook the stew without the chicken as a veggie option, plus if you prefer - cook the chicken separately and serve on the side
