savory pumpkin pie (pastelon de calabaza)

Pumpkin, cooked, 12 cup, mashed Cheddar Cheese, .5 cup, shredded Salt, 1 tsp Ground beef, extra lean, 12 ozOnions, raw, 1 cup, chopped Green Peppers 0.5 cup, chopped Garlic, 6 cloves Tomato Paste, 0.3 cup Egg, fresh, 1 large spanish olives (chopped) 1/4 cupOregano, ground, 1 tbsp*Cumin, ground 1 tsp Pepper, black, 1 tsp flour 2 tbs (or 3 depending on how watery the pumpkin is
Take a spanish pumpkin (calabaza, auyama) and take seeds off and cut in pieces. Put in pot with water to boil with a tsp of salt.
In the mean time, take ground chopped onions, pepper and garlic and sautee in teflon pan with a little water. After onions are translucent, add ground beef (if beef has a lot of fat, brown separate, drain and then add to veggie mixture) Brown ground beef. Add tomato paste and 1/4 cup of water and cook until paste is dissolved. Add oregano, pepper, adobo, cumin and olives, cook for about 15 minutes and set aside.
After pumpkin is tender drain, peel and place in container and mash (like potatoes) until smooth. Wisk egg and add to pumpkin mixture with 2 tbs of flower (to help with consistency of pumpkin)
Place 1/2 of mashed pumpkin in oiled 9x13 baking pan. Take ground beef mixture and pour on top of mashed pumpkin. (drain as much of the sauce as possible before). Spread 1/2 grated cheese on top of meat. Cover with remaining mashed pumpkin and sprinkle remainder of cheese. Bake in microwave for about 15 minutes, or place in oven until cheese is melted.
