SALMON PITA POCKETS

Ingredients
1 can salmon, drained1 Tbsp mayonnaise1/2 stalk celery, finely diced1 green onion, thinly sliced1 Tbsp fresh dill (optional)Generous squeeze fresh lemon juice2 whole wheat pitas8 slices cucumbers2 leaves romaine lettuce, shreddedMix together salmon, mayonnaise, celery, onion, dill (if using) and lemon juiceCut pita pockets in half and open up pockets.Spread about 2 Tbsp of salmon mixture inside each pita pocket on one side only. Place 2 cucumber slices on top of salmon. Fill each pocket with shredded romaine lettuce.To make this into a lunch, serve with fruit and a glass of milk.
