Boiled dinner

Ingredients
1 tbsp oil1 lean 3 lb beef roast, corned beef roast or ham6 medium onions peeled and halved8 carrots, peeled and cut in half1/2 a large cabbage cut in 4 wedges1 large turnip, peeled and cut in 6 wedges6 potatoes, peeled and cut in half2 beef flavoured stock cubes4 bay leavessalt and pepper to taste
Directions
Heat oil in a pressure cooker or large pot at medium high heat. Brown both sides of the meat well. Add stock cubes and bay leaves and cover meat with water. Pressure cook for 25 mins and let pressure down slowly or bring to a boil in large pot and simmer for 3 hours.

Stack vegetables on top of the meat in layers. Add more water if necessary. Return cover to pressure cooker and return to full pressure. Cook 3 minutes and let pressure come down slowly, or if using a pot bring to a boil and simmer for 15 to 20 mins till vegetables are cooked.

Carve meat and serve with vegetables and juices.
This is even better reheated the next day.
