Ingredients
1/2 cup beet juice 1 tbsp garlic powder 1 tbsp fresh parsley, minced2 tbsp lemon juice1 tbsp low-sodium soy sauce1 1/2 tbsp sugar-free maple syrup 350g extra-firm low-fat tofu, sliced into 16 pieces
Directions
Combine all ingredients but tofu in a bowl or measuring cup.
Arrange tofu pieces in a shallow baking dish, and pour the marinade overtop.
Marinate in fridge for two hours, flipping slices halfway through.
Drain, reserving 1/4 cup marinade.
Cook in a non-stick pan over medium heat for 3 minutes a side.
Add reserved marinade and cook over high heat for 2 minutes longer.
