Baked Eggplant Pizza Slices

Ingredients
1 large italian eggplant, peeled1 egg, beaten with a tbsp of water1/2 cup bread crumbs1/4 cup tomato or pizza sauce1/4 cup shredded part-skim mozzarella cheese or italian cheese blend
Directions
Pre-heat your oven to 350 degrees.

Peel a large eggplant and cut into long "steaks" or "circles".

Dip the eggplant slices into the beaten egg then the breadcrumbs making sure it is lightly covered.

Place on a non-stick cookie sheet and place in the oven for 20 minutes. Check that the eggplants are "fork-tender", then spoon tomato sauce on them and top with the cheese. I usually leave a few without sauce.

Bake again until the cheese has melted.

These are great as a meal, or as a filling for a hero, or sliced over a salad. I especially like them without the sauce and cheese on top of a tomato bruchetta salad.

    Very Good Recipe! I've lightened it a little, by just using the egg white & water with panko bread crumbs. I sometimes eliminate the sauce & cheese. I'll sprinkle it with a little garlic powder & grated parm. - 6/6/11

    This was so good...however, I did not use bread crumbs or eggs. I simply baked the sliced eggplant for a few minutes and then topped with my toppings. Either way I will be making this A LOT - 9/25/10

    I'd never cooked eggplant before so I decided to try this recipe. It turned out very tasty! I did half the batch with panko breadcrumbs with Italian seasoning and the other half with regular Italian spiced breadcrumbs. I preferred the regular breadcrumbs. - 8/17/10

    I love the versatility of eggplants. I chose to leave out the bread crumbs and the eggs as well and upped the seasoning to the toppings. I can see doing this with a variety of vegetables. - 7/16/18
