Zucchini "Lasagna"

Ingredients
1-2 zucchinis, sliced and grilled1 jar marinara sauce4 oz mozzarella cheese1-2 cloves garlicItalian seasoning (to taste)
Directions
Place small amount of marinara sauce in the bottom of a lightly oiled baking pan. (I use a 9x9 pan for this recipe.) Arrange slices of grilled zucchini, sauce, and cheese in layers like lasagna. Bake at 350F for 30-45 minutes or until browned and bubbly. Serve with GF pasta (or regular if you're not celiac) of your choice on the side. Calorie and nutrition information does NOT include pasta. Serves 4.

    I do something very similar with eggplant and substitute half the mozzarella w/ part skim ricotta cheese for some creaminess... your recipe is a great use for zucchini... - 8/28/08
