Candied roasted carrots and sweet potatoes

Ingredients
About 12 oz of carrots, chopped into 1 " pieces2 sweet potatoes, peeled and chopped into 1" pieces1.5 tsp Olive Oil.5 tsp Salt1 tbsp Butter, unsalted1 tbsp Maple Syrup
Directions
1. Pre-heat oven to 475 degrees.

2. Toss carrots and sweet potatoes in oil, and salt. Spread into single layer on a rimmed baking sheet and roast 10 minutes.

3. While carrots continue to roast, brown butter.

4. Off heat, stir in maple syrup and drizzle mixture over carrots.

5. Continue roasting about 8 minutes longer, stirring occasionally until veggies are browned and tender.

Serves 4 as a side dish or 2 as a main dish

    Very tasty! My friend who doesn't eat carrots ate all these! The carrots never cook at the same rate as the sweet potatoes, so I left it in about 7 minutes more and it was great. - 11/13/11
