Faux mac n cheese

Ingredients
Large head Cauliflower, cut into bite size pieces2T Margarine2T Flour2C milk2C Low fat cheddar, shreddedsalt and pepper
Directions
Rinse, trim caulifower and cut into bite size pieces. Steam until al dente.
In small saucepan, mix together margarine and flour over medium heat. Stir until golden brown color. Slowly add warmed milk (1/4 C at time), stirring until worked in (no lumps) before adding more milk. Salt and pepper as desired.
Mixture should be creamy smooth.
Stir in shredded cheese.
Fold in cooked cauliflower.
Enjoy.
