McCormick's Beef Stew with Extra Veggies

Ingredients
1 Package McCormick's Beef Stew Seasoning Mix2 lbs Beef (London Broil), cut into 1-inch cubes3 Tbs flour1 Tbs Extra Virgin Olive Oil3 Cups Water2 Cups Baby Carrots2 Cups Red Potatoes, cut into bite size cubes1 Cup Onions, cut into large pieces1 Cup Celery, cut into pieces1 Cup Peas
Directions
1. Coat beef with flour. Heat oil in a large pot over medium heat. Add beef and cook until browned on all sides.
2. Stir in seasoning mix and water. Bring to a boil and cover. Simmer for 1 hour, stirring occasionally.
3. Add vegetables. Simmer 45 minutes or until beef and veggies are tender, stirring occasionally.
4. Thicken stew with additional flour, if desired.
5. Enjoy!

Makes about 10 1-cup servings.

    I substituted 14 oz water with beef stock and added 1C red wine. The london broil was a bit tough so I simmered the stew an additional 30 minutes to tenderize it. I'll def make this again - yummmm - 1/25/09

    Added mushrooms also at the beginning & didnt add the peas until a few seconds before serving (mushy peas are gross). Came out PERFECTLY!!! Just right for the winter. - 9/28/08
