Chicken Posole

Ingredients
2 Cloves garlic1 1/4 lb boneless skinless chicken thighs, cut into 1 inch pieces2 cans (15oz) white hominy, drained and rinsed1 med onion1 t dried oregano.5 t cumin1/4 t red pepper flakes2 lg chicken bouillon cubes4 cups water1 14.5 oz can petite cut dice tomatoes with jalapenos, drained1 TBS lime juice1/4 t salt1/4 black pepper
Directions
makes 8, 1 cup servings.

1. combine garlic, chicken, hominy, onion, oregano, cumin, red pepper flakes, bouillon cubes and water in slow cooker. Cover and cook on HIGH for 3 hours or LOW for 5 hours.

2. Remove cover and stir in tomatoes, lime juice, salt and pepper until warmed through. Serve immediately.
