Red Pepper stuffed with Feta & Chopped Veggies

Ingredients
1 med red bell pepper, top cut off and seeded1/4 cp feta, crumbled1/4 cp cherry tomatoes, cut in half1/4 cp mushrooms, cut into 1/4ths1/4 cp cucumber, cut into small chunks1-2 Tbl onion, diced1 Tbl lite ceasar or olive oil dressing of your choice (optional)
Directions
Chop up veggies.

Coat in dressing (optional). Gently stir in feta.

Spoon into prepared red pepper.
