Cabbage Lentil Tomato soup

1 small head green cabbage, shredded1 cup dried green lentils, rinsed4 cups canned diced tomatoes8 cups fat-free chicken broth1-1/2 to 2 tbsp ground cumin1 tbsp virgin olive oil1 lb. (5 to 6 medium) carrots, sliced thin1 small white onion, dicedgreen onions, chopped for topping
Place all ingredients except the green onions into a large stock pot. Stir and bring to a boil over high heat. Lower heat to low and let simmer until vegies are soft ( about 1 hour). Stir every 15 minutes to prevent lentils from sticking to bottom of pot.
Ladle into bowls, top with onions.
Makes 6 2-cup servings or 12 1-cup servings.
Add salt, pepper or other seasoning if desired.
