10 minute Beanless Corn Succotash

Ingredients
2 Tbsp Olive Oil4 Cups Whole Kernel Corn1 Medium Zucchini, chopped1 Medium Red Bell Pepper, chopped2 Tsp Basil2 Tsp Ground Cumin1/2 cup Chicken BrothSalt and Pepper to taste
Directions
In preparation, chop zucchini and pepper. Put frozen corn in a colander and run hot water over so it is fresh when put in pan.

In a large skillet or wok, heat olive oil on high. Add in vegetables, basil, and cumin, and saute for 5 minutes. Add chicken broth and simmer for 1 minute. Add salt and pepper to taste and serve.
