Lentil Barley stew

Ingredients
2 tbs. olive oil4 carrots, peeled and diced2 leeks, (few inches of green left on), washed and sliced2 zucchini, diced1 large onion, chopped3 tsp minced garlic1 tsp dried thyme or 1 tbs fresh1 cup dried lentils1/2 pearl barley, rinsed6 cups non-fat chicken broth2 cups diced tomatoes1 cup torn basil leaves, or 1 tbs dry basil
Directions
In a heavy pot, saute carrots, leeks, zucchini, onion, and garlic in olive oil for about 15 min. Add thyme.

Add lentils, barley and stock. Bring to a boil then simmer on low for about half an hour.

Add tomatoes, basil, and salt and pepper to taste. Let simmer for 10 more min.

Allow to cool for about 5 min. before serving.
