Italian Eggplant

Ingredients
1 medium eggplant2 T. olive oil3/4 c. dry bread crumbs1 c. spaghetti or marinara sauce1 T. crushed organo leaves3/4 c. shredded Mozzarella cheese
Directions
Preheat oven to 450 degrees.
Peel eggplant and cut into 1/2 in. slices.
Spray both sides of eggplant slices with olive oil and dip into bread crumbs. Placed on cookie sheet which has been sprayed with olive oil. Spoon sauce on top of each slice. Sprinkle with oregano and cheese.
Bake for 10-12 minutes or until done.
Make 4 servings of 2-3 slices.
