Piquant Corn & Tomato Chowder

Ingredients
2 Tbs extra virgin olive oil1 celery stalk, chopped1 tsp cumin2 tsp curry powder1 tsp chili powder2 cups vegetable broth1 can cut plum tomatoes2 Tbs fresh chopped cilantro3 cups sweet corn kernelsGround chipotle (to taste)Sea saltWhite pepper3 cups milk
Directions
In a heavy soup pot, heat the oil to medium & sauté the celery for 5 minutes. Stir in spices & cook for 3 minutes. Add broth, tomatoes, & cilantro and bring to a boil. Reduce heat & simmer for 10 minutes.

Add corn & season with a pinch each of salt, chipotle & pepper. Bring to a simmer over low heat & cook gently until corn is done (10-15 minutes) Add milk and warm gently. Taste & adjust seasonings.
