Patty Pan Squash Cakes

Ingredients
4 c. Patty Pan Squash, Shredded1 Onion, Small, Shredded1 cup Bread Crumbs1 cup Parmesan Cheese, grated2 egg whites, lightly beaten1/2 tsp Salt1/2 tsp Pepper1 cup of prepared tomato sauce for dipping, if desired
Directions
Pre-heat oven to 350 degrees.

Using a grater or a food processer, shred squash and onion.

Put into colander, using a paper, press excess water from veggies.

Put shredded veggies into a bowl with bread crumbs, parm, egg, salt, and pepper. Mix together.

Grease baking sheet with olive oil spray. Shape vegg mixture into patties and place on baking sheet. Bake for 20 minutes or until golden brown on outside. Let sit for a couple minutes before serving.

Serve with favorite tomato sauce on top or as a dip.
