Cashew Chicken

3/4 c Orange juice1/3 cup honey1/4 cup low sodium soy sauce1 TBSP corn starch1 tsp ground ginger1 tsp garlic powder1/2 tsp black pepper2 tbsp veg. oil4 green onions chopped2 large carrots sliced1 celery stalk sliced4 chicken breasts cut in strips
Mix OJ, honey, soy sauce, corn starch and spices together. In a skillet heat 1 tbsp oil and stir fry veggies until onions are fragrant. Remove from pan but keep warm. Heat remaining oil and stir fry chicken until cooked through. Add vegetables to chicken, stir in cashews and pour sauce over mixing well. Continue cooking until sauce bubbles and thickens.
Great served over brown rice , with a side salad

5 stars! Easy to make & VERY tastey. Made a few minor changes: sautee'd veggies first in olive oil (used 1T ), then added the chicken strips to them. Also added 2T of red pepper flakes (we like it hot). Used Worcestshire inst of soy. My DH is on 2nd helping. Have pic,if you want it lmk. YUMMY! - 4/27/10

you can - but from what I understand from my naturopath you really aren't supposed to cook with olive oil. But there are many opinions on that as there is with everything else :)
Just enjoy the recipe..regardless of what oil you use

I was confused why this was Cashew Chicken if Cashews weren't listed in the ingredients. I see them in the directions though. Sounds tasty. - 9/4/08

not sure how the cashews ended up omitted..but they are supposed to be there. 1 cup - I use whole but I imagine it'd be fine if they were chopped
