cucumber salsa

Ingredients
1 large cucumber (81/4")4 plum tomatoes, quartered1 cup fresh cilantro, leafy part only, no stems1 jalapeno pepper seeded and minced2 tbsp vinegar2 tbsp olive oil1 tsp sugar1 tsp ground cumin1/2 tsp salt
Directions
in a food processor, blend all ingredients till chunky consistency.

may want to drain on paper towels to eliminate liquid from the cucumbers,

serve with baked blue corn chips!
