Ingredients
4 medium sweet potatoes (or yams)3 tbsp reduced fat sour cream2 tbsp maple syrup (not the fake stuff!)1/4 tsp cinnamon1/8 tsp nutmegSalt and pepper to tasteOptional: 1 or more tbsp of milk
Directions
Peel and chop the sweet potatoes up into 2" slices, or cubes if preferred. Place into a microwave safe bowl with a small amount of water, cover, and microwave for 5-10 minutes. Start testing doneness at 5 minutes, a knife insterted into a piece of potato should come out easily when they're full cooked. (I'd also stir them around a bit after you check for doneness, before putting them back in the microwave).
Note: You could also steam or boil the potatoes, but the microwave is quicker and has the same results.
When the sweet potatoes are cooked, remove from the microwave and drain off the excess water. Add the remaining ingredients. Mash with a potato masher, fork, or what have you, you could use a hand or stand mixer if you don't want any lumps.
If the potatoes are too thick for your taste add milk 1 tbsp at a time until the desired consistency is reached.
Please taste before serving! The spice measurements are approximate (I just kind of sprinkled some in there). You can adjust everything until it's the way you like it.
Substitues for the maple syrup:
-Light or Dark Brown Sugar
-Honey
