Lemon Lime Chicken w/ Quesadilla & Black Beans

Ingredients
3 Tbs Lime Juice1/2 tsp Lime zest3 Tbs Lemon Juice1/2 tsp Lemon zest1 tsp Granulated Sugar1/4 tsp Crushed garlic 1 Pinch (.05 tsp / to taste) Cayenne Pepper1 Tbs Vegetable Oil2 Chicken Breast, no skin, (.75 lbs ea)Quesadilla4 small flour tortilla1/3 cup of shredded Mozzarella Cheese, whole milk
Directions
Serving size is 2 chicken breast, 2 quesadilla and small protion of baby greens, with 10 oz of black beans

1) In a large bowl, whisk together the lemon juice, lemon zest, lime juice, lime zest, sugar, garlic cayenne pepper, and oil. Place chicken pieces in the mixture, and marinate at least 1 hour in the refrigerator (preferably 2 hours).

2) Preheat Grill or Griddle. Remove chicken from marinade, seasoned with salt and pepper to taste, place on grill.

3) Using 4 small flour tortilla shells make 2 mozerlla cheese Quesadillas

4) Heat cooked black beans.

5) Place small portion of baby greens in center of plate, place 1 Quesadilla on top of greens, then place cooked chicken breast on top of Quesadilla.

6) Serve with black beans on side or quesadilla or in seperate bowl.
