Graham Cracker Apple Crisp

1 apple2 full Honey Maid Low Fat Graham Cracker Sheets (8 crackers when separated)1 Tbsp. ground cinnamon1 tsp. vanilla extract2 packets Sweet 'N Low2 Tbsp. fat free Cool Whip
Crumble one Graham Cracker sheet and place crumbs in a single serving bowl. Chop apple into small pieces and place half of apple pieces over bottom layer of graham crackers. Sprinkle with half tablespoon of ground cinnamon and one packet of Sweet 'N Low. Crumble second Graham Cracker sheet and place in bowl. Add the remaining apple pieces. Sprinkle with remaining ground cinnamon and second packet of Sweet 'N Low. Pour one teaspoon of vanilla over layers. Cook in microwave for 2 minutes and 30 seconds. Top with 2 tablespoons of fat free Cool Whip. Enjoy!
I haven't tried it yet, but this same recipe would probably taste great if peaches or blueberries were substituted for apples, especially if you are a cobbler fan.
