Low Fat Oatmeal Granola Muffins

Ingredients
1 cup oatmeal1 cup nonfat milk1/2 cup applesauce1 egg1/2 cup flour1 cup low fat granola - I use Trader Joe's Almond because it is so sweet6 oz plain nonfat yogurt1/2 tsp baking powder1/4 tsp baking soda1/2 tsp cinnamon1/2 cup pecans
Directions
soak the oatmeal in the milk for 5 minutes. Beat in egg and yogurt. Stir in all other ingredients. Spoon into muffin tins or mini loaf pans. Makes 9 large muffins. Add chocolate chips for a desert bread. Bake 25 minutes at 350.
