Amy's Fresh Summer Garden Primavera

4 tbsp butter2 large cloves garlic, pressed or finely chopped1/4 med. zucchini cut into cubes4 roma tomatoes cut into cubes (cherry tomatoes will work, add a few extras and cut in 1/2)salt/fresh cracked pepper to taste2 servings Dreamfields Pasta, cooked (optional 1 tsp butter or olive oil after cooking to keep from sticking)Fresh grated Parmesan cheese to taste.
Makes 2 servings. (As a single person, I used one for dinner, and took one to work for lunch the next day)
Place water to boil for pasta.
In small saucepan, melt butter and garlic together - DO NOT LET THIS BURN OR CARAMELIZE.
When water boils, add pasta.
When butter is melted and garlic has softened some, stir in zucchini, partially cover for 2-3 minutes.
When zucchini seems to be softening in middle, stir in cut up tomatoes. Partially cover again for 2-3 minutes.
Drain pasta when desired tenderness has been reached, and place in med bowl. (You can add a tsp of olive oil or butter at this point to keep it from sticking together until "sauce" is done).
Stir zucchini & tomato mixture. Salt/pepper to taste. When desired tenderness of zucchini has been reached, remove from heat and pour over spaghetti. Stir to combine all ingredients and thoroughly coat spaghetti. Add fresh grated Parmesan cheese and stir.
Serve and enjoy.! (Makes EXCELLENT leftover for lunch if fixing initially for dinner.)
