Lentil and Brown Rice Stew

Ingredients
1 tblspn Canola Oil1/3 cup chopped onions1/3 cup sliced carrots1/3 cup green and/or red diced sweet pepper1 clove garlic1/2 cup green lentils1/2 cup brown rice4 cups vegetable broth (low sodium)1/2 cup vegetable juice cocktail ( low sodium works well)1/3 can diced tomatoes
Directions
Cook onions and carrots in oil until onions become translucent.

Add peppers and saute for 3 minutes.

Mince 1 clove of garlic and add to pot.

Add vegetable broth and bring mixture to a boil.

Cover, reduce heat and simmer for appox. 40 min.

Add diced tomatoes and vegetable juice cocktail at the end.

Season to taste and enjoy.
