Baby Spinach & Corn Salad

Ingredients
2 C. Baby Spinach Shredded1 C. Thin strips of Carrot1/4 C. of diced red bell pepper1/2 C of Yellow Corn canned1/2 C. of Raisins1 Large Red Tomato Diced1 Tsp of Olive Oil1 tsp of Salt1 tbsp of Cider vinegar or red wine vinegarDash of Black PepperJuice of one lemon wedge
Directions
Wash and drain all of the vegetables.Take the baby spinach and shredd into strips as though you were making cole slaw. Shredd the carrots with a cheese grater. Add the corn, raisins, diced tomatoes, diced red bell peppers and place in serving bowl.

For the Dressing:
Mix the olive oil, lemon juice, salt, pepper, and the vinegar in a bowl. Add to the salad. Then toss and mix throughly.
