Chicken Cacciatore

Ingredients
1 1/4 lb. skinned chicken thighs, (I use boneless)1 cup tomato sauce1/2 cup diced carrots1/2 cup diced onion1/2 cup diced green pepper1 Tablespoon white vinegar1/2 teaspoon salt1/2 clove garlic, minced1/4 teaspoon basi1/8 teaspoon oreganoDash black pepper1/2 teaspoon sugar1/2 cup canned mushroom piecesSnipped parsley
Directions
In medium non-stick skillet, cook chicken thighs until browned on both sides.

In large bowl, combine remaining ingredients, except mushrooms, add tomato sauce to vegetable mixture., mix well.

Pour mixture into chicken, cover and simmer 30 minutes.

Add mushrooms and cook uncovered for 10 more minutes or until chicken is tender.

Makes 2 servings

    This is very good but I found that one cup of tomato sauce is not enough. I added a can of stewed tomatoes and it was enough to put on my rice. - 11/19/08

    This is something I have been looking for. My husband loves Cacciatore. I'm gonna make it tomorrow. I may have to use chicken breast because that's what is on hand. Hope it is still good.
