Crockpot Roast Beef

Ingredients
3 lb beef bottom round roast1 lb red potatoes1 lb baby carrots3 tbs olive oil3 cloves garlic3 tbs herbs de provence
Directions
cut potatoes into bite size pieces, place in large bowl with baby carrots. Add in olive oil and herbs de provence and toss. Pour carrot and potato mix into crock pot. Place roast into the bowl that held the carrot potato mix, rub roast in bowl to pick up remaining olive oil and herbs. Slit roast and place garlic cloves within the slits. Place roast on top of veggies in crock pot. Cook for 2-3 hours on low or 11/2 hours on high.
