Strawberry Banana Whole Wheat Muffins

1C Oatmeal, instant1C Milk155g Banana, mashed140g Strawberries, cut up into small pieces2 Egg Whites3/4C Whole Wheat Flour1/2C Splenda1Tsp Baking Powder1/2Tsp Baking Soda1/2Tsp Salt1Tsp Cinnamon, ground
1. Mix together milk and oatmeal and let soak for 1 hr.
2. Preheat oven to 400 degrees, spray muffin tin with Pam.
3. Add mashed banana, egg whites. Set aside.
4. In a seperate bowl mix together flour, sugar, baking soda, baking powder, salt and cinnamon.
5. Add dry ingredients to the wet ingredients.
6. Gently fold in strawberries.
7. Spoon batter mixture into prepared muffin tin.
8. Bake for 20 minutes.
Makes 6 large muffins
